Breakfast Pizza

I am always looking for unique breakfasts that are high in veggies and protein and low in processed carbs. Sometimes we just get tired of veggies and eggs.  The Cauliflower Crust Breakfast Pizza fits perfectly. You can even put it together the night before, and cook it the next morning. It also is good cold, so make a big one and eat it as leftovers.

Ingredients:

  • Cauliflower crust precooked
  • Cream cheese
  • 3-4 eggs soft scrambled
  • Bacon or sausage
  • Grated cheese

Implement it:

Smear the cooked cauliflower pizza crust with about half a block of real cream cheese. Spread the scrambled eggs over the crust. Spread any breakfast meats you like over the eggs. Sausage or bacon are great or use both!  Top with your favorite grated cheese. I like cheddar for this. Cook at 400 for about 20 minutes or until hot, melted and bubbly.  Cut into slices and enjoy. 

You can make this fancy by adding chopped herbs, maybe some chopped greens, tomatoes, peppers, ham, or anything else you might like on it. I made it this morning with sausage, and left out the scrambled eggs.  Instead, I put it all together ,except the cheese, and just cracked a couple of eggs on top, then added the cheese.  It had a great crisp crust, but the top was ooey gooey and yummy!  Use your imagination.
