Grain Free Cauliflower Crust Pizza 

Sometimes you just have to have some pizza!  Making the crust out of cauliflower is a great way to make your pizza low carb, as well as making your pizza a healthy treat full of veggies.  I’ve attempted several versions of cauliflower crust pizzas from online recipes, and they all have the same problem of having to squeeze water out of the cauliflower, not getting crisp, and being more like a casserole.  I think I have mastered a way to do this that solves all those problems, and incorporates chia and coconut flour!  The gelatinous chia seeds act sort of like glue to hold the crust together.  They also help the crust be crispy. Coconut flour also is a great absorber of moisture, and helps the crust get nice and crispy.  Fair warning, you are going to need a food processor for this one.  If you don’t have one you can do it the hard way by grating the cauliflower.  

Ingredients

  1. A whole cauliflower, cut into florets 
  2. Two eggs
  3. About 6 ounces of grated parmesan cheese.  Don’t use the powdered kind in the green can.  Use real cheese.  
  4. Italian seasoning (1 tsp)
  5. 1/3 cup of chia or hemp seeds
  6. 1/3 cup of coconut flour
  7. Parchment paper
  8. Marinara sauce (I like this one!)
  9. Your favorite toppings
  10. Mozzarella cheese

image-210984146Throw the cauliflower into the food processor and process until it is in crumbles (or do it the hard way by grating it).  Put the crumbles in a bowl and cook on high in the microwave for 4-5 minutes.  Let cool.  Many of the recipes for this type of crust ask you to squeeze out all the moisture at this point.  If you add the chia seeds and coconut flour, then you can skip that unpleasant step!  Put the cauliflower back in the food processor along with the eggs, parmesan cheese, Italian seasoning, coconut flour and seeds.  Process until it is well mixed.

image-210984147Place a sheet of parchment paper on a baking sheet.  The parchment paper is really important.  Dump the cauliflower mix on the parchment covered pizza pans and press it out into a pizza crust with your hands.  Try to get it as thin as you can without any holes.  For my average sized pizza pan one recipe will make 2 pizzas. It takes a bit of patience to press it out thin enough. Cook at 400 degrees until it is brown and the edges on the verge of being very very brown (mid or lower in oven, not top rack).  It takes about 30 minutes.  The smoke detector might go off!  When it is done, take it out of the oven and cover it with marinara sauce.  Add your favorite toppings.  Top with mozzarella cheese and put it back in the oven.  Cook another 15-20 minutes or until everything is melted and looking perfectly yummy.
