Simple Taco Salad

Taco salads are quick and easy. They also are a great way to include cultured gut-healthy foods, organ meats, and healthy fats, to seriously up the nutrition. Here are the basics. 

Ingredients

  • A cup or two of chopped meat of your choice (leftover chicken, beef, or pork)
  • A cup or so of chopped organ meat such as hearts, liver, or kidney. My favorite is chicken hearts. 
  • Chili powder
  • Cumin 
  • Chopped fresh garlic
  • Salt and pepper
  • Lettuce (chopped)
  • Shredded cheese (best to buy a block and shred it yourself, because bagged cheese always has something added to it to keep it from clumping)
  • Salsa (recipe below)
  • Cultured full fat sour cream

Sauté your meats and organ meat in lard or coconut oil. Add a spoon full of chili powder, garlic, and half a spoon of cumin and maybe about ¼ cup of water. Add generous salt and pepper.  Cook until done. Should take maybe 10 minutes.  To assemble the salads, start with a generous bowl of fresh chopped lettuce (could also use kale, choy, chard or other young greens). Add the meat, cheese, salsa and sour cream.   Enjoy. 

Make it super yummy by adding crumbled bacon or fried hog jowel, avocado chunks, or your own homemade salsa. 

Salsa recipe:  Ingredients:

  • Chopped tomatoes (4)
  • One chopped jalapeño with no seeds
  • Bunch of chopped cilantro
  • 4 chopped green onions
  • Juice of 2 limes
  • Generous salt

Mix it up. Taste and adjust seasonings. It will need more salt than you might think. Serve on taco salad or with your favorite dippers.  Pico!
