Tomato Basil Summer Salad

Summer is the perfect time to enjoy fresh tomato and basil salads, because both are in their glory by July. There are many variations on this salad. I actually make it a little differently almost every time I make it. Here is my favorite:

Ingredients

• Fresh summer tomatoes
• Basil
• Fresh Mozzarella
• Great olive oil
• Great balsamic vinegar
• Sweet onions
• Lettuce
• Fresh ricotta cheese
• Lemon zest

Directions

• Slice the tomatoes up into thick slabs
• Pull the leaves off the basil and discard the stems
• Cut about a fourth of a sweet onion into thin slivers
• Put a small bed of lettuce on each plate
• Make a layered stack on top of each bed of lettuce with the following ingredients in order: Tomatoes, ricotta, mozzarella, basil. Repeat so that the stack it two layers
• Put the slivered onions on top of each stack
• Drizzle the olive oil and vinegar
• Grate lemon zest on each salad

You can hange this salad many different ways and it is always delicious. Pictured here are some of my favorites. Don’t worry if you don’t have the right kind of cheese. Use any kind you have. I have made it with blue cheese, feta cheese, goat cheese, and parmesan. They all work fine. Don’t worry if you don’t have the lemon or onions. Not essential. Use any kind of vinegar you have. I have also made it with champagne and wine vinegar. Try some different herbs. I love snipped mint and chives on this salad. Add a bunch of chopped cukes.
